I came across her Instagram last year, and I am always so impressed by her clean and aesthetically pleasing cakes every time she posts a new cake! Her drips are drip goals. 😍 Read on to learn a little bit more about Jannine!
Hi Jannine! Can you share some about yourself?
Hi, my name is Jannine, but many friends and family call me Nina. I was born and raised here in Houston, Texas, and do not plan on ever leaving. I am a dog mom to my babies, Cheerio, and Ghost whom I live with all my heart. I am also marrying the love of my life in December.
When I am not baking, I am working on my doctorate in developmental education and working as a full-time public relations specialist at a community college here in Houston, Texas.
How did your cake decorating journey begin?
I have always loved watching cooking and baking shows and binged watched so many! After dating my boyfriend (now fiancé) for about a year, he saw how passionate I was about cooking and baking and invested in my first Kitchen Aid stand mixer in 2017. From then I started to bake for fun, and then many friends and family started telling me that I should sell my cakes. I also knew it would be a great way to make extra money for school at the time, so I went for it, and the rest was history!
Do you have a favorite buttercream that you love to work with?
My absolute favorite buttercream to work with is definitely Swiss meringue buttercream because it’s so smooth and not as sweet as American buttercream. Once I went Swiss meringue, I never went back!
What are your go-to tools when designing a cake?
My go-to tools are definitely my metal cake scraper, turntable, and my mini offset spatula. For some reason, I can’t seem to ice a cake with a regular-sized offset, no matter how big the cake is.
Is there a baking/cake decorating technique that you would like to try soon?
I am definitely wanting to try the arch cake design inspired by Eliza from Copper Fork Cakes! Everything she makes is just stunning. I’m just not sure how I will tackle that yet!
What are your favorite cake trends?
Definitely the arch cake right now!
Where do you draw inspiration from when it comes to decorating cakes?
I incorporate a lot of fresh floral into my cakes, so I actually watch a lot of YouTube videos on floral arrangements. I think this has helped me tremendously when placing flowers on cakes.
Do you have a memorable cake that challenged you?
Yes! Definitely, the 3 tier cake I made with a hexagon middle tier. Soooo many edges to make sharp!
For 2022, what do you hope to accomplish for your cake business?
I hope to just continue to collaborate with other creatives in Houston! I absolutely love meeting new people and seeing them make a living doing what they love! Ahhhh it gives me goosebumps every time!
What do you enjoy doing besides making cakes?
I love drinking wine, eating popcorn, and watching scary movies. I also love traveling to Austin, it is one of my favorite cities!
What is your favorite food?
My favorite food would have to be Mexican, but it has to be authentic. I love a good homemade sope, enchilada, or gordita!

This was my very first square cake and this definitely won’t be the last! Making those sharp edges was SO satisfying.

I created this square cake for my grandmother’s birthday.
Celebration of Life Cake
I created this cake to celebrate the life of my fiancé sweet grandmother. I got to use my new cake spacers for this cake.

I used a new geometric stencil for this sweet birthday square cake.

This middle tier is a hexagon. Definitely a complex shape with all the corners, but sooooo worth it.
