Perfect Sun Baby Girl Shower Cake

Hi sweet friends! I had the pleasure of creating this adorable sun baby girl shower cake for a long-time client’s daughter! They both wanted the cake to have a fondant smiling sun and chocolate-covered balls on a pink and white color block cake. I was more than happy to make this precious cake! I only hope that this cake will inspire you to do the same for your client, or inspire a new mom to celebrate her baby shower, or a mom who wants to celebrate every child with a sprinkle baby shower! How to make a Fondant Sun Step by Step

The fondant sun needs to be made in advance (2-3 days) so it is firm enough to be a cake topper. You can also do the oven trick to harden the sun, but I prefer to do it in advance.

What is the Oven Fondant Trick?

Place the fondant on the baking tray lined with a silicone baking sheet. Preheat the oven to the lowest temperature, usually 150 degrees, and pop the tray into the oven for 10 minutes. Turn the oven off and take the tray out to rest until they harden. They will be very soft to touch at first, but do not touch until they harden. This can also be achieved with the light on only, without the heat, and the process is the same, but it may take longer.

Step 1: Add tylose powder to the fondant.

Step 2: Roll the fondant out.

Step 3: Create a sun stencil with cardstock. I create mine with my Cricut and cut the cardstock out. Read here to see why you should invest in one for your cake business! If you don’t have one, you can find a shape online or in Canva, print it out, and then cut it. It was a 4.5 x 4.5 sun for a 7 inch cake.

Step 4: Cut the fondant out.

Step 5: Clean up the fondant by making more small cuts.

Step 6: Shape the fondant with your fingers.

Step 8: Use the circle cookie cutter that is 1 inch or 1.5 inches smaller than the fondant to create a dent inside the sun.

Step 9: Let it harden for a day or two. In a hurry? Check out the oven trick above this section.

Step 10: Once the fondant is hard, draw cute eyes, a mouth, and cheeks with edible markers.

Step 11: Melt pink chocolate for the bow. Spread it in the bow mold and place it in the fridge. Place it on the sun once the chocolate bow is firm, using a bit of melted chocolate (yellow so it blends in the background)

Step 12: Melt yellow chocolate to adhere the lollipop stick to the back of the fondant sun. Allow it to harden before inserting it into the cake. (My recommendation is to place it on a cardstock, tape it, and place it in a gallon ziplock if there is no room for the cake box, and the client can insert it)

How to make a Chocolate Foam Balls Step by Step

The chocolate foam balls can be made in advance or on the day of. There is no long drying period for them. I did not use any Ez Thin or coconut oil to thin the chocolate wafers, but they are an option if you find the melts too thick. This process will take up to an hour, so pack your patience and put on headphones to listen to music or a TV show (Or nothing but my thoughts like me LOL)

Step by Step Instructions for the chocolate covered foam balls (video below)

Step 1: Stick a toothpick into a foam ball. Repeat the process with the rest using a variety of foam balls. I used approximately 18-20 foam balls for a 7-inch cake.

Step 2: Start by melting the yellow chocolate. Dip the foam ball into the container.

Step 3: Tap the toothpick on the container to remove any excess chocolate. Stick the toothpick on the dummy cake to let it dry.

Step 4: Repeat the process with all of the foam balls. You may need to dip again in the container to cover all of the foam balls, especially the larger ones.

Step 5: Add Ez Thin or coconut oil to thin the chocolate if necessary. However, be careful not to add too much, as the chocolate will become too thin and fail to cover the foam ball, allowing the white to show through.

Step 6: Allow them to dry thoroughly before inserting them into the cake. (Tip: It is ok to have some imperfect balls; turn these imperfections towards the cake to hide them) (Click here to see how I inserted the balls on another cake)

How To Make a Perfect Sun Baby Girl Shower Cake


Unfortunately, I did not film the cake this time, but below is a video of how to achieve the color block effect using another cake.

Step by Step Instructions for the sun baby girl shower cake

Step 1: Bake the recipe as directed below, or use your favorite cake recipe.

Step 2: Bake as directed. Allow it to cool. Place the cake layers on baking wire racks.

Step 3: Make the buttercream as directed below, or use your favorite buttercream recipe.

Step 4: Fill and stack the 6-inch cake layers. Crumb coat the cake with uncolored buttercream and refrigerate for 15 minutes.

Step 5: Fill and stack the 6-inch cake layers. Crumb coat the cake with uncolored buttercream and refrigerate for 15 minutes.

Step 6: Divide the buttercream into two bowls—color one of the bowls with a pink gel food coloring. I used a couple and added more if I felt the color needed more pink.

Step 7: Fill the piping bag with pink buttercream and another with white buttercream.

Step 8: Pipe the pink buttercream onto the bottom of the cake, covering the middle, then switch to the white buttercream to finish piping the rest of the cake. (Video below)

Step 9: Use the cake scraper to smooth the cake. Repeat the process by filling in the gaps with buttercream and a cake scraper.

Step 10: Refrigerate the cake for 30 minutes.

Step 11: Create the “Baby Girl” in Cricut if you have one. If not, you can opt to use chocolate or fondant letters. To achieve this specific look, you will need to use a Cricut. There is no way around that, unfortunately. Instructions and video are in the IG post below.

Step 12: Once the letters are on the cake, fill a piping bag with piping tip 4B and pipe a border on the bottom of the cake.

Step 13: Insert the chocolate balls into the cake using your discretion.

Step 14: Insert the fondant sun topper (or place it in a ziplock bag on a cardstock for your client to insert)

A classic vanilla cake recipe with vanilla buttercream

Ingredients

Vanilla Cake:

  • 3 cups (342g) cake flour
  • 1 TBSP baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (115g) vegetable oil
  • 1/2 cup (113g) unsalted butter, room temperature
  • 1 and ¾ cup (385g) granulated sugar
  • 160g egg whites (5 eggs)
  • 1 TBSP pure vanilla extract or Mexican vanilla extract
  • 1 and 1/2 cups (350g) buttermilk, room temperature

Vanilla Buttercream:

  • 453g butter (2 cups) Room Temperature
  • 453g powdered sugar (2 cups)
  • 1 TBSP of pure vanilla extract or Mexican vanilla extract
  • 110g pasteurized egg whites (1/2 cup)

Instructions

Vanilla Cake:

  1. Preheat your oven to 350°F. Spray three 6-inch cake pans with non-stick spray.
  2.  Sift cake flour, baking powder, baking soda, and salt in a bowl.
  3.  In a stand mixer equipped with a paddle attachment, beat the butter and oil together for 3-4 minutes, or until they are well blended.
  4.  Incorporate sugar into the mixture and beat on medium to high speed until light and fluffy, about 1-2 minutes. Scrape down the sides of the bowl.
  5. With the mixer on low speed, add the egg whites. Scrape down the sides and add the vanilla extract. Beat on high until the mixture is smooth and light in color, about 1 minute.
  6.  With the mixer also on low speed, alternate the flour mixture with buttermilk, ending with the flour mixture in the bowl, and mix until just combined. Scrape down the bowl. Do this three times (1/3 each time). Do not overmix, or your cake will become dense.
  7. Distribute the cake batter evenly between three 6-inch cake pans. I weigh my batter to ensure uniform size.
  8.  Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Set your timer to 3o minutes and check every 5 minutes to ensure it doesn’t overbake.
  9.  Cool the cake pans on a cooling rack for 10 minutes before inverting and removing cakes from the cake pan to cool completely.

Vanilla Buttercream:

  1. Pour pasteurized egg whites into a stand mixer bowl with a whisk attachment, weighing them to 110g.
  2. Next, sift the powdered sugar and dump it into the bowl, weighing the powdered sugar to 453g
  3. Mix on a low speed to incorporate all the ingredients. Scrape down the sides to ensure all the powdered sugar is combined. Mix again to combine everything.
  4. Add the room-temperature butter to the mixer and mix on medium speed.
  5. Change the attachment to a paddle attachment, mix on high for 5 minutes, and then mix on low for 5 minutes to remove air bubbles.
  6. Add vanilla extract

Notes

Using a food scale is so important! The cake layers can be frozen in advance after wrapped in cling wrap.
