How to make Fun Poolside Cupcakes
Materials Needed
Step by Step Instructions
Step 1: Bake the cupcakes following the recipe below (or use your own) and allow them to cool on a baking wire rack.

Step 2: Make the buttercream as directed (in the recipe below or use your recipe) and color it with a few drops of sky blue gel food coloring.
Step 3: Affix a piping bag with a 2A piping tip and buttercream.
Step 4: Pipe a large dollop on the top of the cupcake.

Step 5: Flip the cupcake upside down and place it on a baking sheet lined with parchment paper.

Step 6: Press and twist on the parchment paper. Place the baking sheet in the freezer or fridge for 15 minutes or longer.

Step 7: Peel the cupcakes slowly off the parchment paper. If the buttercream sticks to the parchment paper, place the baking sheet back in the freezer/fridge.

Step 7: Place the cupcakes on a baking rack.

Step 8: Place the gummy rings (I used lifesaver gummies) on the cupcakes.

Step 9: Pipe a bit of buttercream on the back of the teddy graham.

Step 10: Place the adorable teddy graham on the gummy ring.

Step 11: Cut some sour strips into small strips to mimic a long, rectangular inflatable.

Step 12: Sprinkle on some nonparelis sprinkles all over the cupcakes.

Step 13: Insert the cocktail umbrella picks into the cupcakes.

Step 14: Enjoy the party!

- 1 box white cake mix (Duncan Hines or Betty Crocker)
- 1 cup milk (room temperature)
- ½ cup melted butter
- 3 Large Eggs (room temperature)
- 1 Tbsp. Vanilla
- 1/2 cup rainbow jimmies
Buttercream
- 4 stick butter (2 Cup) (room temperature)
- 7 cups of powdered sugar (confectioners’ sugar)
- 1 TBSP of vanilla extract
- 2 TSBP of heavy cream (add 1 more if needed)
Instructions
- Heat the oven to 350 degrees.
- Put cupcake liners in the cupcake pans.
- Mix the dry and wet ingredients in a large bowl with a stand or electric mixer at medium speed for approximately 2 minutes.
- Fold in the rainbow jimmies.
- Pour the cupcake batter into the cupcake pans.
- Bake for 20-25 minutes. It is ready when the toothpick has a few crumbs or is clean.
- Cool for 10 minutes. Place the cupcakes on the wire rack.
- Buttercream:
- Place the butter in the mixer with a paddle attachment.
- Whip the butter for a minute.
- Slowly add the powdered sugar (1 cup at a time).
- Add the heavy cream (add one more TBSP if it is too thick).
- Add 1 TSP vanilla extract.
- Whip for a few minutes to combine everything. (Make sure to scrape the bowl a couple of times.)
- Whip low speed for 10 minutes to eliminate air bubbles.
Notes
The cupcakes will be good for a few days in an airtight container. Store any leftover buttercream in a freezer-safe ziplock bag and freeze it. To use it again, place the ziplock in the refrigerator overnight to thaw, then re-whip the buttercream. It will remain good for 1 to 3 months, depending on your preference.
