White Chocolate Ganache Filling For Macarons

The most delicious white ganache with simple ingredients that do not need to be melted over the stove!


  • 5oz (141g) Ghirardelli White Chocolate Chips (or a similar brand)
  • 2oz (56g) Heavy Whipping Cream
  • 1 tsp vanilla

Supplies Needed:

Food scale
Microwave Safe Container


  1. Set a microwave-safe bowl on the food scale.
  2. Pour white chocolate chips until you get 5oz (141g)
  3. Pour 2 oz (56g) of heavy cream
  4. Stir with the spatula
  5. Microwave for 30 seconds
  6. Stir
  7. Microwave at 15-second intervals until smooth
  8. Stir in 1tsp vanilla
  9. Leave the container on the counter until firm (it will take 2-4 hours). You want to keep it firm but not too runny for piping. If you are in a hurry, refrigerate it for 30 minutes to an hour, but don’t leave it in the fridge too long. It will be hard! If that happens, pop it back in the microwave for a few seconds. 
  10. Fit a piping bag with a large round tip
  11. Fill the macarons
  12. Top off with the other shell and twist
  13. Let them mature for 24 hours. I usually store the macarons in an airtight container and freeze them.
