Hi! Can you share some about yourself?
Hi, I’m Laurie, the owner & creator of Adi Bear sweets. It was created after my niece Adi who inspired me to get back into baking & take it to the next level.
How did your cake decorating journey begin?
I’ve always enjoyed baking as a kid. I would use my mom’s recipe books & bake from scratch. Cookies were my favorite to make. Every holiday I would make a unique dessert flavor for my family. When my niece Adi was growing up, she would see ideas from Pinterest & would want to re-create them with me. After trying out a few ideas, I became interested in perfecting everything we made & improving in every aspect.
What is your favorite process of baking/cake decorating?
My favorite is the beginning stages of the process when creating the concept for the cake. I love that this one 6in cake could go in hundreds of directions, and I’m in complete control of that. Plus, it’s also all about the collaboration between the customer and me. It’s so much fun sharing ideas, colors & flavors until we reach a final direction for the cake. It’s always my #1 goal to give them exactly what they want.
Is there a cake decorating tool that you can’t live without?
My favorite cake decorating tool is my different evil cake genius combs; whether it is to smooth a cake perfectly, create stripes, or other textures, they are a part of every cake.
Where do you find your inspiration from?
From Pinterest, explorer page, art, everyday life.
What are your favorite cake trends?
Right now, I’m loving the #caketopforward trend. I’m hoping to incorporate it into future cake designs.
Do you have a favorite buttercream to work with?
I use different flavors of American buttercream. It’s my go-to because I know exactly how it works. I would love to try Swiss meringue in the future.
What are your challenges with running a cottage law business?
One of the biggest challenges is the lack of space. I know if I had a brick & mortar, I would double or triple production. The pandemic it’s taught me to use what I have because you don’t know what the future holds.
What is next to try on your list for trying new techniques?
I would love to get better at buttercream florals & to try stacking 3 tier or 4 tier cakes.
What do you enjoy doing besides cakes?
I enjoy traveling, especially to beautiful beaches. My husband’s family is from New England, so I enjoy getting back to the cooler weather & visiting new lighthouses in New England.
